Now that the boys are both in school, mornings are pretty much insanity. It's a whirlwind of rushing, eating, yelling, packing, hugging, and where is that darn shoe!?
Then there's breakfast. Always a challenge because my boys are picky eaters, but now I also I don't have a lot of time, and let's face it nutritious and quick don't always go together.
Luckily I discovered Gary's True Grit Einkorn Flour. It is a better flour because of the compatibility with our bodies when compared to modern hybrid wheat. Einkorn grain has very low gluten levels and is easier to digest, so nutrients are better absorbed. Best of all my boys love the pancakes, waffles, muffins, and crepes, I make with it.
Making this pre-made, pancake and waffle mix saves me time in the mornings and most days we need every minute we can get.
What You'll Need to Make the Pancake/Waffle Mix
Gary's True Grit Einkorn Flour
- OR -
Gary's True Grit Einkorn Pancake and Waffle Mix (this is mix of ancient Einkorn, Brown rice flour, Amaranth flour, Tapioca flour, Sorghum flour, and Dhokla flour - an Indian flour made from chickpeas).
3 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
(optional) 6 tablespoons cane juice crystals
Combine all ingredients in large mixing bowl. Mix together very well. Spoon the entire mixture into a large jar or Ziplock bag.
That's it! Store your mix in the pantry and you are ready to make homemade, nutritious pancakes and waffles even on busy school-day mornings.
What You'll Need To Make Pancake & Waffles
1 cup of your pre-made Pancake/Waffle Mix
3/4 cup almond or coconut milk
1 teaspoon vanilla
1 egg for pancakes (2 eggs for waffles)
1 tablespoon butter or coconut oil
Wisk together all ingredients in a large bowl. Melt a tablespoon of butter or coconut oil on the pan you will be using and once melted pour it and mix it into your batter. Return pan to stove and make your pancakes, about 1/4 cup batter for each pancake. When pancakes begin to bubble (about a minute or two), flip over to brown the other side.
